"Encouraging" NoBakes

Do you crave chocolate?  I sure do.  Mostly when I'm feeling blue or at what I imagine to be that particular time of the month.  I say imagine because now that I'm perimenopausal, I'm never sure when or if that time is coming.  Whatever.

This post is about yesterday, when I was here all alone and thinking about a bazillion things that weigh on my mind but only stay long enough to stir things up in there before they disappear, making room for one more fleeting worry that pokes at me like an annoying child.  Anyway, I NEEDED something chocolate and nothing else would do.

I rifled through the cupboard and found some oatmeal.  Now, if you think like I do, that immediately said, "No Bake Cookies" to me!  I got out my ingredients, raw milk and organic evap. cane juice, organic cocoa powder, homemade vanilla, organic oatmeal, amish butter, peanut butter...with all these whole food ingredients I shouldn't feel too guilty about that should I?

But after the chocolaty goodness began to waft up to my eager nostrils, I did feel guilty.  So I started thinking...how can I make these better for me?

Aha!  Things tend to be a little slow moving at times and so I decided to make a kinder, gentler, more "encouraging" NoBake...a geriatric version, if you will.  I try to get at least a 1/4 cup of Smart Bran in my cereal or yogurt most days.  So I substituted 1 cup of Smart Bran for 1 of 3 cups of oatmeal.  By doing this, the normal recipe seemed to be very dry...and cardboard like...and this morning, rather cement like.  So I put them all back in the pot, added a little more milk and butter and melted them down to goo again. The texture is much better...now I can enjoy them with less guilt and hey, when you NEED chocolate, you don't really need the added guilt, right!?

Here's my recipe:

"Encouraging" Geriatric NoBakes
1/2 + 1/8 cup butter
1/4 cup cocoa powder
2 cups evap cane juice
1/2 + 1/8 cup cup raw milk
Stir well over medium heat.  Boil 2 minutes
Add:
1 tsp vanilla
1 cup Smart Bran
2 cups regular oatmeal
1 generous dollup of peanut butter.

Drop by spoonfuls onto wax paper or just eat them out of the pan...either way.

Now if I could just add something to help me remember what I was doing before this all started.
